Rhubarb Crumble porridge

Ingredients

For the rhubarb compote:

  • 4 sticks of rhubarb, topped, tailed and cut into small cubes
  • 3 tbsp honey


For the almond crumble:

  • 100g whole almonds, skins on
  • 1/2 tsp sea salt
  • 3 tbsp maple syrup


For the porridge:

Method

  1. To make the rhubarb compote, heat the ingredients in a pot over a medium heat until the rhubarb breaks down. Add more maple syrup to taste if desired. Set aside to cool.
  2. To make the almond crumble, whizz all the ingredients together in a blender until a crumble is formed. Set aside.
  3. To make the porridge, place the White’s Oats Organic Oat Flakes in a saucepan and add the milk and a pinch of salt. Bring to the boil, then reduce the heat and simmer for 4-5 minutes, stirring from time to time and watching carefully that it doesn’t stick to the bottom of the pot.
  4. Divide the porridge between two bowls and top with the rhubarb compote and the almond crumble.
