Homemade Granola with Maple Flavoured Yoghurt and Fresh Berries

Ingredients

This homemade granola is a great way to add extra flavour and excitement to your breakfast bowl. It's also great for a snack.

  • 450g (15oz) White's Organic Jumbo Oats
  • 2 dsps sunflower oil
  • 2 dsps honey
  • 1 tsp vanilla extract
  • 75g (3oz) unsalted almonds
  • 75g (3oz) unsalted cashews
  • 55g (2oz) sesame seeds
  • 25g (1oz) flax seeds
  • 115g (4oz) raisins or craisins (dried cranberries)
  • 115g (4oz) assorted fresh berries
  • 125ml yoghurt
  • 2 tsps maple syrup

Method

Pre-heat the oven to 175*c/Fan oven 155*c/Gas mark 4. Place the rolled oats onto a large baking sheet, place in the oven and toast for approx. 15 mins, turning once or twice.

In a small saucepan, combine the oil, honey and vanilla and heat until warm. In a bowl combine together, almonds, cashews, sesame seeds and flax seeds. Pour over the warmed honey mixture and stir well, then pour over the oats.

Bake in the oven for 15 mins turning every 5 mins to prevent over cooking. When cooked and toasted, add the craisins and cool.

Store in an airtight jar and serve for breakfast with fresh fruit and honeyed maple syrup. To serve, mix together the berries. The maple syrup can either be mixed with the yoghurt or poured over the top.
