Ingredients

330g White’s Oats Real Fruit Berry & Seed

120g ground almonds

50g goji berries

130ml oil (we used half each of vegetable and coconut oil)

100ml maple syrup

2 eggs, whisked

1 tsp vanilla extract

1 pinch of salt

Method

1. Preheat the oven to 180 ̊C/160 ̊C fan/gas mark 4.

2. Simply toss all the ingredients in a large bowl and stir until fully combined.

3. Use a tablespoon to roughly get the same amount of mix for each cookie, roll in your hands and then place on a baking tray and flatten slightly with the palm of your hand.

4. Bake for 15 minutes and check. It's best to bake these until nice and brown at the edges so the oats are lovely and toasted in flavour. Give them a few more minutes if necessary.

5. Allow to cool for 10-15 minutes but definitely do eat while warm for best results.
