Overnight Oats Recipes

There’s no better way to start your day than with a bowl of creamy apple, chia and pecan overnight oats – creamy, and packed with real apples and protein packed chia seeds for a nourishing and nutritious boost in every spoonful.
For the oats
2 tbsp chia seeds
1 tbsp honey
Pinch of sea salt
300ml milk (regular or plant-based will work)
For the apple compote
2 large cooking apples, peeled, cored and chopped
1 tbsp cinnamon
4 tbsp maple syrup
To serve
Chopped pecans
Extra maple syrup
1. Divide the oats, chia seeds, honey, sea salt and milk between two jars (with lids) and mix to combine. Refrigerate overnight.
2. In the meantime, prepare the apple compote. Put all of the compote ingredients in a small pot with a splash of water. Cover and cook over a medium heat for five minutes, or until the apples are tender when pierced with the tip of a knife. If you prefer a smoother mixture, continue to cook for a further five minutes, uncovered, stirring to break down the apples into a compote.
3. Allow to cool and store in the fridge for up to five days.
4. Before eating the overnight oats, top with compote, pecans and a little extra maple syrup if desired.
Kitchen tips
● You can make the overnight oats in a larger jar, scooping out a portion each morning, along with the compote and other toppings.
● This recipe can easily be doubled to make four servings, setting you up for the week or to fuel the entire family.
● This recipe makes enough apple compote for four servings. Double the recipe, or you can also enjoy it on creamy porridge or yoghurt.
