100g Speedicook oats
350 ml soya milk
240 ml water
3 Medjoul dates
2 tbsp coconut sugar
1 tsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
pinch of ground cardamom
For the pears:
1 pear (Conference work great)
1 tbsp coconut sugar
1 tsp coconut oil
Place the oats, water, soya milk, dates, coconut sugar and spices into a small pan.
Cook on a medium heat, stirring frequently until the porridge thickens.
While the porridge is cooking slice the pear into thick slices. Heat the coconut oil in a frying pan and sprinkle the pear slices with coconut sugar. Cook the pear on medium high heat until the sugar is caramelised and the edges are turning golden.
Serve the porridge topped with the pears and maple syrup.
I also love to add some crunchy nuts and a spoonful of peanut or almond butter.
