This vegan recipe combines pears and cinnamon and is a delicious autumn mix. You can make in advance and even double the quantities for another time too.
We have used White’s Speedicook Porridge Oats – they are deliciously smooth and creamy and only take 3 minutes to cook!
Poached Pears
2 Medium sized pears (not too ripe) – peeled, cored and halved
2 Tablespoons maple syrup
1 Cinnamon stick
220ml Water
1 Lemon – zest peeled into julienne strips ~
Porridge
80g White’sSpeedicook Porridge Oats
220ml Plant-based milk e.g. almond or cashew
300ml Poached pear liquor
1 Teaspoon cinnamon
Pinch of salt
To Serve: Drizzle maple syrup, sprigs of fresh mint
1. Place the pears, maple syrup, cinnamon stick, water, and lemon zest into a medium sized saucepan. Bring to the boil and simmer for 8-10 minutes or until the pears are soft but not falling apart.
2. Using a slotted spoon, scoop out the pears and simmer the poaching liquor for a further 5 minutes until you have a thick syrupy consistency. Remove the cinnamon stick.
3. Place the porridge ingredients in a the same saucepan, bring to the boil and simmer stirring from time to time for about 3 minutes or until all the liquid has been absorbed.
4. Transfer to a bowl, stir in the pears, and drizzle with a little maple syrup. Garnish with sprigs of fresh mint.
