Coconut & Apricot Energy Balls

  • Makes 10

40g White's Jumbo Organic Oats

100g raw cashew nuts

50g desiccated coconut (plus a little extra for coating)

130g dried apricots

30ml milk of choice

1. Blend all ingredients together in a food processor or blender, until combined to form a dough consistency

2. Carefully roll into balls in the palm of your hands

3. Place extra desiccated coconut onto a plate and carefully roll the balls through the coconut

4. Store in the fridge for 7-10 days
