Coconut & Apricot Energy Balls

Makes 10

Ingredients

  • 40g White's Jumbo Organic Oats
  • 100g raw cashew nuts
  • 50g desiccated coconut (plus a little extra for coating)
  • 130g dried apricots
  • 30ml milk of choice

Method

1. Blend all ingredients together in a food processor or blender, until combined to form a dough consistency

2. Carefully roll into balls in the palm of your hands

3. Place extra desiccated coconut onto a plate and carefully roll the balls through the coconut

4. Store in the fridge for 7-10 days
