Coconut Oat Festive Snowball Recipe


Lemon Raspberry And Coconut Balls

Our coconut, raspberry & lemon Oat Balls are the perfect Christmas holiday snack and great fun to make with your kids.

Over the festive period we might find ourselves indulging in chocolate, sweets and junk food. If you're looking for a treat after all that indulgence that is wholesome and filling, try our ever popular coconut, raspberry and lemon snowballs. Why not get the kids involved and make them together. These snowballs are a delicious and healthy alternative to give you the energy for whatever activity you might get involved in over the festive break.

Ingredients:

  • 100g White's Speedicook Oats or White's Organic Jumbo Oats
  • 60g of any 3 seed mix
  • 30g ground almonds
  • 50g unsweetened peanut butter (without palm oil)
  • 25g honey
  • 1/2 teaspoon vanilla extract
  • 40g frozen raspberries
  • Juice and zest of a lemon
  • 75g desiccated coconut
  • cake pop sticks

Method:-

Preheat the oven to 180c/gas mark 4

  • Place the oats, seed mix, almonds, peanut butter, honey, vanilla, raspberries, lemon zest and half of the lemon juice into a food processor and blend until the mixture is finely chopped and begins to form a dough.
  • Remove the dough from the processor onto a clean dry work surface and roll into 12 equal size balls (roughly 26g).
  • Sprinkle coconut into an oven tray and lightly toast in a hot oven for a few minutes until golden.
  • Dip the balls into remaining lemon juice before rolling in toasted coconut.
  • Store in an airtight container.

For the perfect festive activity with the kids, why not get creative and turn these treats into snowmen. Thread three oat balls onto each cake pop stick to make the snowmen. Cut raisins into little pieces and dried apricots into triangles to make the nose, mouth, eyes and buttons. Decorate your snowmen and use pipe cleaners to create tiny hats and scarfs.

Covered in coconut 'snow' these little dessert balls taste like heaven and make a great DIY Christmas activity too! Find a big enough jar or decorative box and you're good to go.
