Irish home made granola with maple flavoured yoghurt & fresh berries

Ingredients

1 lb/450g/4 cups organic jumbo porridge oats
2 dsp sunflower oil
2 dsp honey
1 tsp vanilla extract
3oz/75g unsalted almonds
3oz/75g unsalted cashews
2oz/55g sesame seeds
1oz/25g flax seed

4oz/115g raisins or Craisins (dried cranberries)
 
Method

Boil the potatoes. Dry and mash the potatoes thoroughly. Add the oats, salt and melted butter and mix well. Roll out mixture and cut into quarters or make round shapes with cutter.

Slightly oil a frying pan and cook pieces on each side until they are golden brown. Enjoy with a little melted butter over the top.
