Berry and Oat Crème Fraiche
Ingredients
50g (2oz) White’s Organic Jumbo Porridge Oats
3 tablespoons honey
15g ginger (chopped)
175g (7oz) of fresh berries of your choice
1/4 pint yoghurt
1/4 pint low-fat crème fraiche
Grated rind of 1/2 lemon
Method
Preheat oven to 350°F / 180°C / gas mark 4. Mix oats with two tablespoons of the honey and spread over a baking sheet. Cook in the preheated oven for approx 15 minutes, stirring at regular intervals. Remove from the oven; add the ginger to the oats and leave to cool. Crush berries and stir in the toasted oats. Mix the yoghurt and crème fraiche with the grated lemon rind until well combined and sweeten to taste with the remaining honey. Layer the berries and cooled oats with the yoghurt mixture in a serving bowl or individual glass dishes. Refrigerate for 1-2 hours before serving.
