Makes 10 - 12 fritters
Ingredients
- 150g plain flour
- 2 tsp baking powder
- 1 sachet of Whites only oats
- 3 large eggs, beaten
- 125ml milk
- 4 rounded tablespoons of low fat crème fraiche
- 198g tin of sweetcorn drained 3 tbsp chopped chives
- 3tbsp chopped parsley
- salt and freshly milled black pepper olive oil
To Make
Beat together the flour, baking powder, oats, eggs, milk and creme fraiche into a bowl. Stir in the sweetcorn, chives, parsley and some seasoning.
Heat a little olive oil in a non-stick frying pan. Drop 2 tablespoons of batter per fritter into the pan and cook for a couple of minutes. Turn-over and cook for a further 2 minutes or until the bases are golden.
Keep warm while you cook the remainder of the batter, adding more oil to the pan as you cook each batch.
Serving Suggestion
Serve the fritters with crispy bacon, grilled plum tomatoes and a poached egg.
