Fresh bircher muesli with fruit

Ingredients

2 cups Whites Speedicook Porridge Oats
1 cup 8 fl.oz apple juice
1 cup coarsely grated apple
115g/125ml natural yoghurt
Juice 1 lemon
½ cup sliced peaches and nectarines
¼ cup mixed berries
2 tbsp honey

Method

Place the oats and apple juice in a bowl and soak for 1 hour, or overnight. Add grated apple, yoghurt and lemon juice to the oat mixture and mix well.  Spoon into serving bowls and top with fruit.  Drizzle with honey.
